For onion lovers, try adding caramelized onions to the Mac & Cheese. Adding a serving of vegetables makes it a complete meal. My favorite vegetables to add to my meal prep are 1/2 cup of frozen mixed vegetables & 1/4 cup of frozen edamame, adding 100 calories, 7 grams of plant-based protein, and 4 grams of fiber. Lower-calorie vegetable options that would go great include green beans, broccoli, cauliflower, carrots, roasted zucchini, or a green salad.
This recipe starts by making the simple turkey chili or your favorite high-protein chili. Then make the cottage cheese mac and cheese and bake it into a casserole.
